Properly thawing meat is just as crucial as freezing it. Mistakes at this stage can not only diminish the product’s flavor and texture but also foster the proliferation of harmful bacteria. During the summer heat, these risks are considerably amplified.

Before placing meat in the freezer, it is advisable to divide it into smaller portions. This is not only more convenient for subsequent use but also helps better preserve the product’s quality. Smaller pieces freeze faster, resulting in fewer ice crystals that damage muscle fibers. Conversely, large cuts often become more watery and lose their firm texture after thawing.

Packaging also plays a significant role. For storing meat, it is recommended to use airtight freezer bags or vacuum sealing. If the product is exposed to air, its surface dries out, oxidation begins, its color changes, an off-odor may develop, and its taste qualities can be compromised.

The majority of errors occur during the thawing process. One of the most common is the habit of leaving meat on the kitchen counter at room temperature. During hot weather, this method is particularly hazardous. While the center of the cut remains frozen, the surface heats up to a temperature conducive to rapid bacterial multiplication. This can significantly increase the risk of food poisoning.

Thawing meat in warm water is also not recommended. Although this method seems faster, it leads to uneven thawing: the outer layer warms up, while the product inside remains icy. Consequently, the taste and texture deteriorate, and the warm environment creates a breeding ground for bacteria.

It is also advisable to avoid using the microwave oven, even if it has a defrost setting. Due to uneven microwave distribution, certain parts of the meat may begin to cook, while others remain frozen. This negatively impacts the product’s structure and can lead to uneven cooking. Fish is particularly susceptible to this method, as its delicate texture is easily damaged.

The best approach is slow thawing in the refrigerator. Although this process requires more time, it ensures even thawing at a safe temperature. Furthermore, the meat loses less moisture, better retaining its texture and flavor.

Special attention should be paid to fish, which spoils faster than other types of meat. It is recommended to thaw it exclusively in the refrigerator and cook it as soon as possible after thawing. The liquid released during this process should be drained, as it can harbor bacteria from the product’s surface. It is also advised to rinse fish before cooking.
